My son Braydon loves helping me make Green Eggs for breakfast. We happen to have kale growing in our towergarden so, we start by going into the backyard and picking fresh kale for our green eggs. We throw the above ingredients in our mini food processor, blend, pour them in a pan and scramble them up. The amount of almond milk to use is just a splash and the kale and salt and pepper are to taste. We like lots of kale in ours as you can see. Try starting with a few leaves of kale and increase the amount each time you make the eggs. Your taste for greens will develop and you will want to add more kale each time. Kale is an excellent source of Calcium, Vitamin A, C and it has powerful cancer preventing phytonutrients so Enjoy!
So yes not only do I eat kale for breakfast but my 1 year old daughter Charlotte loves these eggs so much she sneeks them off her brothers plate for more!
Someday I would love to be able to gather not only the kale but also the eggs fresh from our backyard. Braydon and I both want chickens once we live in a neighborhood that will allow it. Perhaps a mini farm is in our future.
