Healthy Recipe to Satisfy Junk Food Cravings!

There are times we all crave french fries or something deep fried. Of course, we should stay away from these items as consuming them has been linked to a myriad of health issues, yet for those days when all you can think about are breaded or fried items there exists healthier alternatives. This featured recipe of Zucchini Fries with Wasabi Mayo comes directly from Dr. Rachel's kitchen and is sure to satisfy a deep fried craving.

Zucchini Fries

Ingredients:

1 zucchini, cut into fry sized strips
2 eggs, beaten
1/2 cup almond meal
1 teaspoon garlic powder
Olive oil
Salt and pepper to taste

1) Preheat oven to 400 degrees.
2) Beat eggs in shallow bowl.
3) In a second bowl mix almond meal garlic powder salt and pepper and mix coating evenly.
4) Toss each zucchini strips into egg bowl.
5) Remove zucchini from egg one at time. Shake off excess egg and roll in almond mixture coating evenly.
6) Place zucchini on large baking sheet ensuring there is at least 1/8 inch of space around each one.
7) Spray with olive oil mister, or drizzle with I've oil if you font have a mister.
8) Bake in oven for 15-20 minutes flipping half way through until golden brown.
9) Remove from oven and salt. Eat and know these are way better for you than regular fries or even (especially) those deep fried bread coated things they sell at bars.

Wasabi Mayo

I used grapeseed oil vegenase mixed with wasabi powder to taste.  You can use wasabi paste or powder, but you need to make sure you look at the ingredients.  A lot of these products have artificial coloring added.  Also you can make your own mayonnaise but I was lazy that night and used the vegenase.
