Healthy "Rolos"

This is a great sweet treat you can keep in the freezer.  Grab one when you want a little sweet or bring a plate out for dessert when you have last minute dinner guests.  Healthy and no added sugar.  They are simple and delicious!

Ingredients

11-12 large pitted soft Medjool dates

½ Tablespoon nut or seed butter of your choice

Pinch of salt

½ cup dark chocolate chips or chopped chocolate

1 teaspoon coconut oil

Chia seeds (optional)

Directions

  • Add dates with nut or seed butter to the food processor and blend until a sticky paste forms
  • Chill date mixture in freezer for 10 minutes, then shape into 30 small balls
  • Freeze balls again for 10 minutes.  Meanwhile, gently melt chocolate with coconut oil in a saucepan over low heat.
  • Stick each chilled ball with a toothpick, lollipop/candy or popsicle sticks  and dunk into chocolate.  Tap off excess.  Sprinkle with chia if desired
  • Place bites back into freezer for at least 20 minutes to set.  Bites taste best when they are firm and cold, from the freezer.  They soften at room temperature but don’t melt…unless you are in Arizona, which I am…so use your own judgment.
